The objectives of this study are to ferment raw garlic into black garlic, containing a much higher level of bioactive compounds including sulfur-containing compounds, phenolic acids and flavonoids, and prepare nanoemulsion for enhancement of biological activity. The nanoemulsion has an average particle size of 10.8 nm, zeta-potential of -60.7 mV and encapsulation efficiency 83.2%,with high heating and storage ability. Rat experiment shows that this nanoemulsion could lower the blood pressure, escape latency and swimming distance, and increase the time spent in the target quadrant. Also, this nanoemulsion could suppress oxidative stress, inflammation and aging. In this study we demonstrate the first time that black garlic nanoemulsion could lower blood pressure and improve dimentia in rats without side effect. Thus, this nanoemulsion possesses a great potential to be developed as a botanic drug for treatment of patients with hypertension and the elderly with dimentia. |

This study used black garlic as raw material, a naturally fermented product of garlic, possessing a high level of bioactive compounds such as sulfur-containing compounds, phenolic acids and flavonoids than that in raw garlic. In this study we developed a stable nanoemulsion with particle size of 10.8 nm for successful encapsulation of these bioactive compounds and enhancement of bioactivity. Rat study showed that it could decrease the blood pressure, escape latency and swimming distance, and increase the time spent in the target quadrant, suppress oxidative stress, inflammation and aging without side effect. Collectively, the black garlic nanoemulsion possesses a great potential to be developed as a drug for treatment of patients with high blood pressure and Alzheimer’s disease. |
Industrial Applicability |
The United Nation report indicated that by 2050 the population of the aged people (>65) will be more than 2 billion. Currently there is no drug available which can be used to treat Alzheimer’s disease. In this study we developed a nanoemulsion technique for encapsulation of bioactive compounds in black garlic for enhancement of biological activity. According to the result of animal study, this black garlic nanoemulsion possesses a great potential to be developed as a botanic drug for treatment of patients with Alzheimer’s disease and hypertension. Thus, the development of this product should play a vital role in the global brain-protecting market. |
