Nostoc commune is an edible terrestrial blue-green alga in Taiwan. Nostoc commune ethanol extract (NEE) evaluations anti-oxidation ability and phytochemicals composition levels, next the Nostoc commune powder were extract of cured polysaccharide and quantitative total sugar in vitro. In cell model, we used NEE in 3T3-L1 preadipocytes cell proliferation and lipid accumulations model. Nostoc commune powder was development seaweed noodle and determine acceptability by sense evaluation. This can be used as a raw material for Nostoc commune health food, feed supplement or as a food at a concentration of 1~50 µg/mL. In 3T3-L1 preadipocytes cell model, result showed NEE could reduce cell proliferation and lipid accumulations after NEE treatment, and 50 μg/mL NEE was not inhibiting 3T3-L1 cell viability. Finally, it was determined that the sensory evaluation of the 2% Nostoc commune noodles in the 50-59 age group had higher acceptance than other age groups. |

To develop noodles with Nostoc commune powder, it was found that 2% Nostoc commune noodles have good consumer acceptance and can inhibit the accumulation of triglyceride hyperplasia capacity of fat cells. |
