Scientific Breakthrough
We successfully developed a new technique by using ultrahigh
pressure infusion which can avoid the need to freezing, long timeof reaction, and thermal destruction simultaneously. This innovativetechnique can make amazing products such as Drinkable Apple whichmaintain the original appearance and color, flavors, as well asnutrients with internal pulp fully softened and meet the Japan ElderlyFoods standard.
Industrial Applicability
In the care and welfare for the elderly, diet and nutrition are the keys to health. Degradation and mental disorders such as chewing, swallowing, digestion and absorption of elderly people limit the types and methods of diet and can easily lead to disease, resulting in a huge family and social harm. Therefore, research and development of nutrition, easy to eat, and sensory stimulation of the elderly food is an important issue.
