Technical Name Establishment of UPLC-MS/MS combined with Core-shell C18 column and QuEchERS method for rapid determination of heterocyclic amines (HAs) in foodstuffs
Project Operator National Yang-Ming University/China Medical University
Project Host 楊登傑/江舟峰
Summary
UPLC-MS/MS with Core-shell C18 column was used to develop a high-sensitivity and rapid method to simultaneously determine 22 of HAs in 15 min (it is currently the fastest method to detect the most HAs). In addition, QuEChERS was used to establish rapid extraction conditions (completed in 30 min) for the HAs of the nine major food matrices (currently most). The results were in line with the TFDA regulations, and could be routinely used for rapid monitoring of HAs in foodstuffs.
